Mumma Scoop’s Rock Cakes

A simple recipe that brings back memories from my childhood. This is one I can remember ‘helping’ with when I was little. Slightly crunchy on the outside and soft and sweet in the middle these Rock cakes are still a favourite of mine. 

Ingredients

  • 225g Self Raising Flour
  • 1 tsp Baking powder
  • 113g Margarine
  • 60g Caster Sugar
  • 170g Mixed dried fruits ( raisins, sultanas, currants)
  • 1 egg
  • 1-3 tablespoons Milk
  • 1tsp Mixed Spice

Method

Preheat the oven to 200C Fan/Gas 4 and lightly grease a baking tray.

Mix the flour, sugar and baking powder  and mixed spice in a bowl and rub in the cubed butter until the mixture looks like breadcrumbs, then mix in the dried fruit.

In a clean bowl, beat the egg and milk together. 

Add the egg / milk mixture to the dry ingredients and stir with a spoon until the mixture comes together as a lumpy dough. If it’s not coming together add a splash more milk. 

Spoon golf ball sized portions of the mixture onto the baking tray. Ensure you leave some between them as they will spread out to double their size during baking.

Bake for 15–20 minutes, until golden-brown. Allow to cool for a couple of minutes, then turn them out onto a wire rack to cool.
